Tomato mixture:
1 medium onion, chopped
Garlic (to taste)
1 tsp salt
1/2 tsp pepper
1/4 tsp sugar
28 oz can chopped tomatoes
4 tbsp olive oil
For the Shrimp:
2 lbs peeled shrimp
2 tbsp olive oil
2 tbsp butter
2 tsp brandy
In a saucepan, cook the onion, garlic, salt, pepper, sugar, chopped tomatoes, and 4 tbsp olive oil. Simmer for about 20 minutes.
In a separate pan, cook the shrimp with olive oil, butter, and brandy until just cooked.
Layer the shrimp at the bottom of a baking dish.
Cover the shrimp with the tomato mixture.
Add pitted olives and crumbled feta cheese on top.
Bake in a preheated oven at 400°F for 15 minutes.
Garnish with fresh parsley before serving.
