Cookies:
4 cups Mazola oil
1/2 lb. butter (at room temperature)
1 cup orange juice
1 cup cold water
2 tsp vanilla
3 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 eggs (beaten)
About 9–10 cups flour (adjust as needed)
1 tsp cinnamon (optional)
Syrup:
3 cups sugar
3 cups water
2 tbsp lemon juice
Optional: Add a couple of cinnamon sticks, cloves, and orange juice for extra flavor.
Optional: Add 2 tbsp honey after boiling.
Cookies:
Beat the butter and Mazola oil at low speed.
Add the orange juice, cold water, and vanilla. Beat eggs and add them to the mixture.
Sift several cups of flour with the baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and continue to add flour until the dough is of the desired consistency.
Shape the dough as desired (typically oval shapes for Finikia).
Bake in a preheated oven at 350°F for about 30–35 minutes (check at 25 minutes depending on your oven).
Syrup:
Combine the sugar, water, and lemon juice in a saucepan.
Bring to a boil and simmer for 20 minutes.
Once the cookies are baked, roll them in the warm syrup.
Sprinkle with finely ground nuts (optional) for garnish.
