12 eggs
1 tsp salt
1/2 cup water
3 tbsp whiskey
9 or more cups flour
Pot of hot deep fat (1/2 solid vegetable shortening and 1/2 vegetable oil)
Ground walnuts
Ground cinnamon
Honey syrup:
1 cup sugar
1 cup honey
1 cup water
1 tbsp lemon juice
Mix all. Add enough flour to make a soft dough that does not stick to the fingers
Keep oil on hands, knead mixture. Cut into 6 balls, cover for 1 hour
Prepare hot deep fat in pot at 365 degrees
Roll each ball individually until paper thin. Keep remainder of dough covered until ready to use to avoid drying
Cut rolled dough with pastry wheel into 4" x 6" pieces
Fry in hot deep fat. Using 2 forks, turn dough over once and quickly roll (like jelly roll) before it becomes crisp. Fry until lightly browned
Remove to drain on absorbent paper. Cool
Make honey syrup: combine ingredients, heat to boiling. Cook until medium syrup has formed
Dip theples into hot honey syrup. Sprinkle with ground walnuts and a dash of ground cinnamon.
