1 gallon homogenized milk
1 cup water
2 cups pearl rice
1 cup sugar (may need 3-4 tbsp extra for sweetness)
1 tsp salt
Heat milk (1 gallon) and water (1 cup) on med-high to almost boiling point -- must keep stirring often as you don't want the milk to stick to the bottom and taste burnt.
Add rice (2 cups). Keep stirring, cook additional 15 minutes on med/high. Constant stirring until it starts boiling. Lower heat to medium.
Add sugar & salt and keep stirring until mixture thickens. At this point taste and add the extra sugar. Will take 45 min - 1 hour for pudding to thicken - stir often. Pudding will be a little runny when done
Pour into casserole dish, sprinkle cinnamon on top while hot. Refrigerate when pudding cools.
